Ridge Gourd( HeereKai) and Eggplant (badanekai) Tava Rava Fry

Ridge Gourd ( HeereKai in Kannada) and Eggplant (badanekai) is one of the simple, quick and tasty vegetable fry ever. I have already posted Bread Fruit and Fish fry with the same masala. One of my mom's konkani friend used to prepare this Eggplant fry. She indeed had a huge collection of vegetable fries and pakora's. Hmmm..yummy. It had been years I didn't taste this eggplant fry. Checked my refrigerator and found only two small Eggplants. Oh! I used the rest for Sambar. Still went along with the idea and included Ridge Gourd too for the yummy fries. You can include even potatoes if you don't like Eggplants.




Here's the simple vegetable tava rava fry


Ingredients

Eggplants - 2 

Rige Gourd - 1 small sized 

Red Chilli powder - 2 tsp

Haldi/ Turmeric powder - 1/2 tsp

Amchur powder - 1 tsp

Salt to taste.

Oil - for shallow frying.

Chiroti rava/ semolina  for coating.

Method

1. Wash the vegetables and cut it into slices. Remove the sharp ends of the ridge gourd and cut into slices.

2. Make a paste of red chilli powder, haldi, amchur powder and Salt with little water. 

3. Apply this to the vegetable slices and keep aside for 10 mins for marination.

4. Coat each slices with rava and place it on the greased frying pan or tava. Cover it with a lid and cook for 3-4 mins in a low - medium flame.

5. Turn the slices and cook till the vegetables are cooked.

Serve hot .

French Toast - Eggless

French Toast is a tasty quick fix for the breakfast. Usually French toast is made of egg and milk but this is an eggless version and for all those vegetarians who consider egg to be a non-vegetarian, I am sure you will surely like this. Eggless french toast is prepared with masaledar chickpeas flour. This can even be served as an evening snack with some tomato ketchup and kids will love it.

Snake Gourd Sabzi is one of the easiest and healthy sabzi prepared in minutes with just a few handy ingredients. Snake Gourd is also known as Padavalakayi or Potlakayi in Kannada. I love to add soaked Toor Dal for this Sabzi as it gives a wonderful taste to the Sabzi.

Keema Matar Masala

Chicken Keema Matar Masala is one of the easiest and a great combo with chapati's or Roti's. As the name indicates keema and matar( green peas), the dish is prepared with a great combination of minced chicken with green peas. This can also be made with minced meat(mutton).

It was a long weekend this time and I tried out this awesome delicious Keema Matar for Sunday dinner and the family enjoyed this with hot hot chapati's.

Dill Leaves Paratha

Paratha's are very popular in Northern States of India. Lots of Paratha's are being added by the food lovers and in the restaurants. Being always tempted to have Paratha for breakfast, I end up trying with some greens for the breakfast. One such try was this Paratha/ Chapthi with Dill Leaves. Love the look of greens here and there in  the flatten wheat dough. I prepare this very often with Methi/ Fenugreek leaves, But this was my first try with Dill Leaves

Dill leaves is nothing but Sabsige soppu or Sabaski Soppu in Kannada. 

For all those who love greens and love this Dill Leaves, try this tomorrow for the breakfast or even for lunch or dinner and feel more healthier ;)

Aloo Bonda/ Vada for Bombay Special Vada Pav

Aloo Bonda is one of the simplest mouthwatering variety among Vada's or Bonda's. Had some mashed potato balls leftover after preparing delicious Aloo Paratha's. Stored it in a fridge and planned to do some quick Aloo Bonda's for my son after his tiring day back from school. Only thing missing was Pav. Well! Lets try that anytime later.
